Bailey, professor of the Department of Chemistry, was one of KU's most illustrious scientists. He wrote more than a hundred articles and books during his forty years at KU. He was especially interested in preventing the adulterations of foods and in preserving, packaging, and cooking them properly and fought for pure food laws in the state.
